We all have that one friend or family member that whenever you say “I use coconut oil in my cooking” they immediately think that your cookies, cakes, pasta dishes and chicken dishes MUST taste like coconuts! No matter how much you tell them that a good, unrefined and cold-pressed coconut oil has theversatility to compliment any dish and not overpower it with a “coconutty” flavor, they will still think you’re stuck with cooking tropical dishes. Today being April’s Fools Day, I thought it would be a good idea to share my favorite dishes that contain coconut oil and really show the versatility of the oil. So if you are willing to make a dessert or dinner for the friends and family that don’t agree with your love for coconut oil, trying making some of the following dishes.

  1. Thin Mint Cookies – Who doesn’t get extremely giddy when you see your local Girl Scouts outside your favorite grocery store? You know that for the next few weeks those cute little girls will be asking you to buy some delicious cookies and let’s face it, it’s really hard to resist! Unfortunately, you can only buy these cookies during a certain time of the year and then they are gone. Try making these delicious homemade, gluten-free thin mints if you’re craving the sweet minty and chocolate cookies. The coconut oil pairs well with the chocolate and mint so there is no overpowering flavor of coconut oil, just chocolatey, minty goodness!
  2. Chick-Fil-A Chicken Nuggets – These are a huge favorite of my little guy at home; he would eat a whole adult serving of these guys if I would let him. Unfortunately, chicken nuggets aren’t the healthiest of foods since the chicken is cooked in a refined peanut oil. Even with the oil not being healthy for us, many people may have a peanut or nut allergy so eating this may cause an outbreak. Try making these delicious nuggets at home and cook them with an unrefined, cold-pressed and organic coconut oil. I promise they taste the same if not better and you’re incorporating some healthy fats into your meal!
  3. Sautéed Tilapia with Coconut Oil– Now cooking fish can sometime be a little tricky but if you replace your olive oil with coconut oil you’ll come out with a fantastic fish. It will be extremely flaky, moist, and flavorful, without tasting like coconuts! It’s also important not to use olive oil when cooking or sauteing as olive oil breaks down under high heat which makes the oil lose it’s nutrients. Try pairing olive oil with your favorite salad in a dressing.
  4. Simple Scrambled Eggs– Who says you can’t have breakfast for dinner? Nobody, do it! You won’t believe how many people talk to us on a regular basis and say that cooking their eggs in coconut oil is their new favorite breakfast meal. Typically you make scramble your eggs with a little bit of butter but I prefer coconut oil. Not only do the eggs not stick to the pan but the oil really brings out the flavor of the eggs and whatever spices that you may be using. Also, use coconut oil to spread on toast instead of butter, absolutely delicious!

  5. Zucchini Brownies – This is a double whammy recipe for a day like today but I promise it’s worth it. Shred some zucchini into your brownie mix and use coconut oil instead of vegetable oil and you will create the BEST brownies ever. I wasskeptical about this at first because adding veggies to my dessert didn’t seem appealing but after I made them I was glad that I did! My husband couldn’t tell there was zucchini in them and our son just gobbled his brownie right up. The coconut oil once again pairs well with the chocolate and I honestly think the zucchini helped the brownies stay moist! Try these if you haven’t already.
