Ingredients

Dijon mayo

  • 1 tbsp 1 tbsp Dijon mustard
  • ¾ cup 180 ml mayonnaise

Turkey schnitzel

  • 1 1 large egglarge eggs
  • ¾ cup (2 oz.) 180 ml (60 g) shredded Parmesan cheese
  • ¼ cup (1 oz.) 60 ml (28 g) almond flour
  • 1 tsp 1 tsp salt
  • ½ tsp ½ tsp ground black pepper
  • 2 tsp 2 tsp dried thyme
  • 1 tsp 1 tsp onion powder
  • 1 tsp 1 tsp garlic powder
  • 2 oz. 55 g butter or ghee
  • 1½ lbs 650 g turkey cutletturkey cutlets

Green bean fries

  • 14 oz. 400 g fresh green beans
  • salt and ground black pepper

Serving

  • 1 1 lemon, cut in wedgeslemons, cut in wedges (optional)
  • 1 tbsp 1 tbsp capers, rinsed and drained (optional)

Instructions

    Dijon mayo

  1. In a small bowl, mix together the Dijon mustard and mayonnaise. Set aside.

Turkey schnitzel

  1. In a shallow dish, whisk the egg with a fork. In another shallow dish, combine the parmesan cheese, almond flour, salt, pepper, thyme, onion powder, and garlic powder (for the "breading").

  2. Dip the cutlets in the egg, to coat on all sides. Allow the excess egg to drip off, and then completely cover and coat the cutlets, in the dry mixture.

  3. Melt the butter in a large frying pan, over medium-high heat.

  4. Place the cutlets in the pan, and cook for 4 - 5 minutes per side, until golden brown and cooked through. Remove the schnitzel to a serving dish, and cover with foil to keep warm.

Green bean fries

  1. Add the green beans to the same pan. Cook and stir over medium heat for 5 minutes, or until crisp-tender. Season with salt and pepper to taste.

  2. Serve the turkey schnitzel and green bean fries, with the dijon mayo, lemon wedges, and capers.

    Def want to make this recipe, but is a turkey steak the same as a cutlet? Can't find a "cutlet" but my local Hannaford Supermarket does carry turkey steak.

    A cutlet is generally referring to a specific cut of breast meat, so if you don't have cutlets you can use any boneless cut of meat you prefer. Chicken breast or pork would work well also.

    Great recipe. I used chicken breast instead of turkey and I passed on the mayo/dijon sauce. I love the green beans cooked in the same pan as the cutlet. All the little crispy bits added a nice touch to the green beans.
